Ingredients For The Grilled Chicken

  • 1 to 1 ¼ pounds boneless chicken breasts
  • 2 TBs of red wine vinegar or lemon juice
  • 2 TBs olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon of dried oregano
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper

For the Salad

  • One head of romaine lettuce
  • ½ cucumber, chopped
  • ½ cup halved cherry tomatoes
  • 2-4 tablespoons chopped red onion
  • ½ cup grilled corn

Roasted sweet potatoes

  • One avocado
  • Feta cheese (optional)
  • Honey mustard dressing

Instructions

Grilled Chicken Salad

  1. Begin by whisking the red wine vinegar or lemon juice, olive oil, garlic powder, dried thyme, oregano, salt & pepper in a mixing bowl until well combined.
  2. Transfer the boneless chicken breasts to a shallow dish or a 1-gallon sealable plastic bag. Add the prepared marinade, toss to coat the boneless chicken, and refrigerate for at least 1 hour or up to 12 hours.
  3. While the chicken is marinating, make the dressing and prepare the remaining salad ingredients.
  4. Remove the chicken breast from the marinade, allow any excess to drip off, and discard the leftover marinade.
  5. Preheat a wood pellet grill or grill pan. Once hot, put the chicken breast on the grill and cook for at least 5 minutes per side or until the chicken is fully cooked and no longer pink.
