This Top Round Roast is a delicious lean beef dinner that can be prepared easily in the oven. Here’s how to make it:

Ingredients

  • 4 pounds top round roast
  • One tablespoon of high-temperature oil
  • Two teaspoons of kosher salt or sea salt
  • One teaspoon of freshly ground black pepper
  • One teaspoon paprika
  • One teaspoon of garlic powder

Instructions

  1. Take the beef out of the refrigerator about an hour before cooking to ensure more even cooking and tender meat.
  2. Preheat the oven to 450°F (232°C). Place a shallow roasting pan with an ovenproof wire rack aside for later use.
  3. Combine the salt, pepper, paprika, and garlic powder in a small bowl.
  4. Dry the meat thoroughly with paper towels. Rub it on all sides with the oil, ensuring an even coating. Then, rub the seasoning mix all over the roast.
  5. Place the top round roast in the prepared pan, and if you have one, insert a wireless thermometer into the meat.
  6. Put the pan in the preheated oven for 10 minutes. Afterward, lower the oven temperature to 325°F (163°C).
  7. Continue roasting for approximately 50-60 minutes. If desired, halfway through cooking, baste the meat by spooning the pan juices over it.
  8. Remove the roast from the oven and pack it with aluminum foil. Allow it to rest for 10-15 minutes, letting the juices redistribute through the meat. This is a good time to collect the pan drippings to make gravy.
  9. To serve, slice the roast thinly against the grain and drizzle the collected juices or gravy on top.

Ingredients

  • 1-inch thick round steak (approximately 10 oz.)
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup extra-virgin olive oil
  • Two tablespoons of red wine vinegar
  • 1/2 teaspoon crushed red pepper flakes
  • 3/4 teaspoon dried oregano
  • Three cloves garlic, divided
  • Two tablespoons of vegetable oil
  • Two tablespoons butter
  • Two sprigs rosemary
  • Flaky sea salt

Directions

  1. Place the round steak between two pieces of parchment paper and gently tenderize it using a meat mallet, being careful not to make it too thin—season generously with salt and pepper.
  2. Put the steak into a resealable bag or container. Add olive oil, red wine vinegar, red pepper flakes, and dried oregano. Finely grate one garlic clove directly into the bag and mix well to combine. Marinate at room temperature for 30 minutes.
  3. Remove the marinade steak and pat it very dry. Peel and crush the remaining two garlic cloves.
  4. Heat oil in a cast-iron skillet. Cook steak for 5 minutes, flipping once, until golden crust forms on both sides.
  5. Reduce the heat to medium and add butter, crushed garlic, and rosemary to the pan. Tilt the skillet towards you to allow the melting butter to pool at the bottom. Using a spoon, continuously baste the steak with the butter to develop a richer golden crust. Flip the steak and repeat, taking about 2 to 3 minutes.
  6. Transfer the steak to a cutting board and rest for 10 minutes.
  7. Thinly slice the steak and return it to the skillet to serve over the flavorful juices. Finish with a sprinkle of flaky salt.

Ingredients

  • 1 ½ cups minced parsley
  • Eight cloves garlic, minced

  • 1 ½ teaspoons salt
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground black pepper
  • 1 cup of olive oil
  • ½ cup of red wine vinegar
  • 3 lb Beef

Instructions

  1. Mix minced parsley, garlic, oregano, salt, red pepper flakes, and black pepper in a bowl.
  2. Add olive oil and red wine vinegar. Mix and adjust salt and pepper to taste.
  3. Reserve 1 cup of chimichurri in an airtight container for garnishing later. Store it in the refrigerator.
  4. Use the other 1 cup of chimichurri to marinate the meat. Place the beef in a zipper-sealed bag and pour it in the marinade—Marinate in the refrigerator for at least 12 hours (up to 24 hours).
  5. Remove the roast from the fridge 1.5 – 2 hours before roasting to bring it to room temperature.
  6. Preheat your oven to 450°F (230°C).
  7. Line a roasting pan with aluminum foil. Drain the marinade from the roast and place it on the roasting rack in the pan.
  8. Roast at 450°F for 15 minutes.
  9. Reduce the oven temperature to 325°F (163°C). Continue roasting for 60-70 minutes or until your desired doneness is achieved. Use an instant-read thermometer to check the meat’s temperature, aiming to remove it 5-10 degrees below your desired level, as it will continue cooking while resting.
  10. After roasting, let the meat rest for 10 minutes before slicing.
  11. Serve the sliced roast with the reserved chimichurri sauce, which should be brought to room temperature before serving.
