This is a simple recipe for making a delicious Spatchcock Chicken that cooks faster, is packed with taste, stays moist, and ensures evenly cooked meat every single time. 

Ingredients

  • 4 lb whole chicken

For The Dry Rub

  • 2 tsp ground black pepper
  • 2 tsp sweet paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp celery salt
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander

Instructions

  1. Mix all the dry ingredients in a small bowl and keep aside.
  2. Place the chicken breast side down on a clean surface. Starting from the neck, use kitchen scissors or poultry shears to cut along each side of the backbone towards the legs, cutting through the rib bones.
  3. Find the cartilage at the center where the breastbone starts. Make a quarter-inch deep cut and spread it open to expose the breastbone. Then, flip the chicken over and press down firmly with the heel of your hand to flatten it, ensuring it’s butterflied to an even thickness.
  4. Evenly sprinkle the dry rub over the chicken and rub it into the skin for better adherence. Let the chicken sit while you preheat your traeger Fremont wood pellet grill or smoker to 400°F.
  5. Place the chicken and rib bones on a roasting sheet (for oven use) or directly on the grill. Cook for 40-45 until the chicken reads 160°F.
  6. For added taste, feel free to baste the chicken with your favorite sauce every 20 minutes.
  7. Once done, remove the chicken from the grill/smoker and rest for 15 minutes. 
  8. Now, you’re ready to cut the chicken into pieces or shred it as desired and serve.
